Kickin' Chicken Stuffed Peppers


Kickin' Chicken Stuffed Peppers are conveniently portioned and packed full of flavor in one easy-to-make and totally delicious dinner recipe they'll ask for time and again.

INGREDIENTS
CHICKEN STUFFED PEPPERS
 4 large bell peppers, halved lengthwise, seeds removed
 1 rotisserie chicken, removed from bones and shredded (approx 1 pound shredded chicken)
 2 cups cooked rice (I use Jasmine or brown rice)
 1/4 cup diced red onion
 1 (10 ounce) can Rotel (tomatoes with peppers)
 1 teaspoon cumin
 1 cup shredded cheddar cheese

TOPPINGS (OPTIONAL)
 1-2 limes
 sour cream
 green onions, finely sliced
 Weber Roasted Garlic and Herb Seasoning

INSTRUCTIONS
Preheat oven to 350° F.
Using a large bowl, combine shredded chicken, cooked rice, red onion, Rotel and cumin.
Evenly divide chicken mixture into pepper halves and top with cheese.
